Vibrant flavours of fresh Thai herbs and other uniquely Asian ingredients give this curry paste its wonderfully distinctive fragrance and mellow flavour. Medium heat with a hint of sweetness.
THAI GREEN FISH CURRY
- 500g white fish fillets, cut into serving portions
- half jar Charmaine Solomon's Thai Green Curry Paste
- 2 tablespoons oil
- 200ml good quality canned coconut milk
- 1 tablespoon fish sauce
- 2 teaspoons sugar
Heat the coconut milk, add the half jar Thai Green Curry Paste and bring to a simmer.
Stir well, lower in the fish fillets and cook gently only until fish becomes opaque.
Seasoning may be adjusted by adding the fish sauce and sugar.
Garnish with leaves of Thai basil or coriander if desired.
Serves 4 with steamed rice.
