Almond and Feta Muffins

Ingredients:

150g greek feta cheese            

¾ cup castor sugar

2 ¼ Tbsp honey                

½ cup Gaea DOP Kalamata extra virgin olive oil

1 cup all purpose flour            

100g ground almonds

1 tsp baking powder            

Brown Sugar for garnishing

 

Method:

Pre heat oven to 175 degrees celcius.
Mix the cheese with the sugar and honey until smooth. Add the Olive Oil.

In a separate bowl combine the flour with the ground almonds and baking powder then add to the cheese mixture, continue to combine ingredients until they are well mixed. Divide the batter among 6 greased muffin moulds. Sprinkle with brown sugar and bake for approx 25mins or until golden.

Makes 6 muffins
