Salad of Orange, Date and toasted Almonds
A beautifully aromatic salad, perfect served with duck or game meat or with barbecued chicken. Rocket or fresh spinach can be added if greens are desired.
Ingredients:
2 oranges
1/4 cup fresh dates
1/4 cup toasted slivered almonds
1 tbsp freshly squeezed lemon juice
1/4 extra virgin olive oil
1/4 tsp orange blossom water
2 tsp castor sugar
Method:
With a sharp knife remove the skin and pith from the oranges and cut into thick slices.
Remove the stone and chop the dates and arrange on to a plate with the oranges.
Combine lemon juice, orange blossom water and sugar.
Sprinkle over salad.
Just before serving decorate with toasted almonds.
