Sweet Chilli, mango and roasted red pepper dipping sauce
This delicious sauce makes a refreshing accompaniment for fresh or deep fried spring rolls or dim sums, it is also equally delicious for use with barbecued kebabs or white meats such as chicken or fish.
Ingredients:
1 small fresh mango diced into small cubes
1 medium flame roasted red pepper finely diced
4 tbsp smooth extra virgin olive oil
1/2 cup sweet chilli sauce
Handful of fresh coriander finely chopped
1/2 handful of fresh thai basil finely chopped
salt and freshly ground black pepper to taste
Method:
Put olive oil into a small-medium mixing bowl, add sweet chilli sauce and stir until blended, add red pepper and stir gently through sauce, add mango and coriander and gently combine with other ingredients.
Add a pinch of salt and black pepper to taste.
Pour sauce into a serving bowl and sprinkle with basil.
