Thai Style Salmon Cakes

Ingredients:

500g Salmon Fillets                                         
2 tsp Charmaine Solomon’s Thai Red Curry Paste
2 Spring Onions, finely minced                  
5 tender green beans
kaffir lime leaves, sliced into fine threads                                             
2-3 tbsp olive oil
Sea salt

Method:

Finely chop the salmon fillets and mix with the spring onions, green beans, kaffir lime leaf and salt.
Thoroughly mix in the Charmaine Solomon Thai Red Curry Paste.
Form into small patties with dampened hands.
Put oil into a non-stick frying pan and heat pan. 
When the pan is hot, cook the patties for 2 minutes each side or until just cooked.
Garnish with a few extra threads of Kaffir lime leaf or spring onion and chilli slices.
Serve with fresh green salad leaves and slices of cucumber.
