Sweetcorn Fritters with Polenta

Ingredients:

1 ½ cups Kernal Corn            2 cups buttermilk

1 ½ cups Polenta            40g melted butter or oil

½ cup plain flour                1 egg separated

1tsp baking soda            Oil for frying

!/2 tsp salt

Method:

Combine Polenta, flour, baking soda and salt. Add buttermilk, oil, and egg yolk. Stir to combine and add corn. Beat egg white until stiff and fold into batter.

Cook in medium to hot pan until cooked and browned.

Can be served with maple syrup and bacon.
