Thai Green Curry of Fish
This Green Curry Paste is made for those who love the fragrant flavours of Thai cuisine but can't handle lots of heat and is equally suited to chicken.
Ingredients:
500g white fish fillets
half a jar Charmaine Solomon's Thai Green Curry Paste
2 tablespoons oil
200ml good quality canned coconut milk
1 tablespoon fish sauce
2 teaspoons sugar
Directions:
Heat 200mls good quality canned coconut milk and add half a jar of Charmaine Solomon's Thai Green Curry Paste, and bring to simmer.
Stir well, lower in 500g fish fillets cut into serving portions and cook gently only until fish becomes opaque.
Seasoning may be adjusted by adding a couple of teaspoons sugar and a tablespoon of fish sauce.
Garnish with leaves of Thai basil or coriander if desired.
Serves 4 with steamed rice.
