Chicken Breasts with Gaea Crete Sauce & Stuffed Olives

Inspired by the traditional Greek Salad, Gaea has created this authentic cooking sauce with the exact ingredients used in the original Greek salad.

Gaea’s ready to use (heat and serve) sauce, is made from quality natural ingredients with no artificial additives, colours or preservatives.

Ingredients: 4 boneless chicken breast halves with skin on, 2 jars of Gaea Crete sauce, 3 large shallots (or 1 red onion & 2 garlic cloves chopped), 3 Tbsps Gaea Kalamata extra virgin olive oil, 2 Tsps fresh or dried oregano, 2 cups chicken or vegetable stock, 1 cup crumbled Greek feta, ½ cup Gaea stuffed green olives chopped, rock salt and cracked pepper.

Stir fry the shallots or onion & garlic in extra virgin olive oil until soft. Add oregano and stir. Season chicken with salt and pepper and add into the pan skin side down. Cook until lightly brown then turn over. Add the Crete sauce and the stock and cover and bring to the boil. Reduce heat to medium-low and simmer until chicken is tender, approx 15-18 mins. Place chicken on a plate. Continue boiling the sauce over high heat until thickened, approx 5 mins. Mix in feta and olives and simmer until well heated, approx 5 mins.

Serve with rice, serves 4.
