This award winning cold extraction D.O.P. extra virgin olive oil comes from Kalamata in South Peloponnese, Greece. It has been selected for numerous awards due to its uniquely balanced and harmonious fresh-green flavour and peppery aftertaste.
CHOCOLATE MOUSSE WITH KALAMATA EXTRA VIRGIN OLIVE OIL
- 270g good quality extra bitter dark chocolate
- 170ml Gaea Kalamata Extra Virgin Olive Oil
- 7 eggs
- 150g sugar
- pinch sea salt
- 50g Cointreau
- grated orange peel from 1 orange
- chocolate flakes for topping
Melt the chocolate in a bowl placed over boiling water and add the Kalamata Extra Virgin Olive Oil and Cointreau.
In a bowl, beat together the egg yolks and half of the sugar until the mixture becomes fluffy. Add the mixture into the chocolate and mix well.
In a separate bowl, beat together the egg whites with the rest of the sugar and the salt. Fold it into the chocolate mixture with the grated orange peel.
Serve in individual bowls adding chocolate flakes for topping. Place into refrigerator until ready to serve.
