Used with a light touch, Pomegranate molasses adds that exotic sweet-sour tartness so favoured in many Persian and Arabic dishes. This dressing works well with vegetable salads, like spinach or eggplant as well as bitter salad leaves, and is good drizzled over barbecued fish or poultry. It works brilliantly spooned over natural oysters.
