Delicious with seafood, poultry or meat, this Thai curry paste, redolent of galangal, lemongrass, coriander root and kaffir lime, is for those who enjoy some heat.  Serve with rice.  Medium hot.

 

THAI RED CURRY WITH PRAWNS

  • ½ jar Charmaine Solomon's Thai Red Curry Paste
  • 2 tablespoons oil
  • 1 cup coconut milk
  • 500g-750g shelled and de-veined green prawns

Gently fry the Thai Red Curry Paste in the oil until fragrant.  Stir in coconut milk and allow to simmer for 5 minutes uncovered.  Add the prawns and cook only until opaque.  Serve with steamed rice.  Serves 4 - 6.

THAI RED CURRY OF DUCK WITH LYCHEES & PINEAPPLE

  • ½ jar Charmaine Solomon's Thai Red Curry Paste
  • 2 tablespoons oil
  • 1 cup coconut milk
  • ½ roast duck, ready cooked from your local Chinese shop
  • ½ cup drained pineapple pieces
  • 1 cup drained canned lychees

Gently fry the Thai Red Curry Paste in the oil until fragrant.  Stir in coconut milk and allow to simmer for 5 minutes uncovered.  Chop roast duck into bite-sized pieces and add to sauce along with the pineapple pieces and lychees.  Heat through and serve with steamed rice.  Serves 4 - 6.
