This North Indian speciality, combining aromatic spices with saffron, has become one of India's most popular dishes.  Ideal for making mattar panir (spiced fresh cheese and green peas).  Serve with Indian breads or rice.  Medium hot.  Vegetarian friendly.

 

BUTTER CHICKEN

  • 750g diced chicken thigh fillets
  • ½ jar Charmaine Solomon's Butter Chicken Marinade
  • 2 tablespoons ghee
  • 1 cup tomato puree
  • 1 tablespoon sugar
  • ½ cup cream

Rub the chicken fillets with the Butter Chicken Marinade and marinate for 1 hour or overnight in the refrigerator.  Heat the ghee and brown chicken, then add the tomato puree and sugar.  Simmer for 20 minutes or until chicken is tender, then stir in cream.  Heat through and serve.

MATTAR PANIR (for vegetarians)

  • ½ jar Charmaine Solomon's Butter Chicken Marinade
  • 1 tablespoon ghee
  • 1 cup tomato puree
  • 1 tablespoon sugar
  • 200g diced baked ricotta or panir
  • 1 cup frozen peas
  • ½ cup cream

Cook the Butter Chicken Marinade in the ghee, add the tomato puree and sugar and simmer for 10 minutes.  Add the baked ricotta or panir and frozen peas.  Simmer for 5 minutes, stir in cream, heat through and serve.
